Chicken 2 ways

Recently we had alot of chicken meals. Here are two favs.....The first meal I took a variation of a Rachel Ray Recipe. I wanted to cook up some Chicken Pieces and roast them. I found a good recipe on RR. It was called Plain Jane Chicken with Roasted Garlic Gravy. YUM right? My Variation of the recipe ............I made Asparagus(Instead of Broccoli) and I made Hollandaise Sauce instead of Making Gravy. Basically I made the chix and the potato like RR Recipe. The only thing I would do differently was I didn't have a proper pan to cook the chix in and it splattered alot. I need a good roasting pan! This was such a tasty fast Easy meal. All I did was peel potatoes and sauteed my Asparagus. Everything else went in the oven to cook. I made the Hollandaise sauce and that was easy too. I buy the premade packet of Hollandaise sauce and the brand is KNORR.



Next meal was an easy fast grilling Meal. Grilled Rosemary Chicken with Pineapple and Flavored Rice. This one is even more simple. Rub Fresh Rosemary onto your chix(take the rosemary off the sprigs and chop into smaller pieces). Than take a whole pineapple and gore it. Cut into rings. Make White rice and saute in Butter and add your chopped up Tomatoes. Put the chix and the Pineapple on the grill and you have a healthy fast easy supper.

Leftovers

I know I was talking about eating our leftovers ...........so I thought I would share what we do with them. Here is a good way to "JAZZ" up your leftover white mashed potatoes. We make potato patties out of them and use the extra gravy on top. I know, not a low fat meal but it's a old fashion recipe and yummy. It uses up alot of the potato and is a good way to use the mash potatoes leftovers before they spoil. Below is just a pix of our Leftover meal. Along with the potato Patti we have Green Bean Casserole, Stuffing and Sweet Potato. We had a ton of leftovers this year from Thanksgiving. Thus, we have been eating this all weekend. I am tired of Turkey now. Not pictured was our turkey sandwich we made with the leftover turkey fixins. I'm sick of Thanksgiving feast and about ten pounds heavier(LOL)! Time for that crash diet before CHRISTMAS. hee!


Everyone have a wonderful Sunday. By the way, don't forget to watch Home Makeover show tonight. Tonight episode is about a family from Twin Cities. Very sad but interesting story about that family. It's been on the news here alot. I think the show is 2 hour show tonight. As it's their 100th family or something like that. I don't watch this show too much. Only on occasion. Our friend help Drywall the home that will be on tonight's episode. On the show they take only 7 days to build a home. That's like a crazy time frame to build a home. I can't believe they can do this. It's taken a few months for my dh to build our tiny porch(LOL)! I guess it helps when you have a whole CREW of people working all at once.

Time for me to go...........it's one of the last nice days outside and need to go enjoy it just a bit. Hope everyone had a wonderful Thanksgiving Weekend!!!
